About This Place

Nestled in the heart of Boulder, Colorado, Blackbelly Market & Restaurant is a standout American dining destination that effortlessly blends the charm of a butcher shop and deli with a refined restaurant experience. This multifaceted venue uniquely celebrates farm-to-table freshness with a masterful emphasis on house-cured meats and thoughtfully sourced ingredients, delivering a culinary journey that is both soulful and sophisticated.

The menu at Blackbelly speaks volumes about their commitment to quality and flavor. Start your day with their famously Perfect Breakfast Burrito, offering a harmonious balance of creamy eggs, savory fillings, and just the right kick of spice. For lunch or dinner, the Blackbelly Burger is an irresistible indulgence—made from American wagyu, topped with thick-cut house bacon, sharp cheddar, and their signature burger sauce, all nestled in a benne seed bun and accompanied by golden fries. Seafood lovers will find delight in the Pan Seared Sablefish, a dish that arrives with a delicate beurre blanc, sprouting cauliflower, and grilled savoy spinach, beautifully marrying richness with freshness.

Vegetable sides are far from ordinary here. The Grilled Sprouting Broccoli with anchovy vinaigrette and Aleppo pepper offers a bold, umami-rich contrast, while the Alpine Potato Rosti, topped with pickled shallots and crème fraîche, delivers a crispy, tangy punch that complements any main. The kitchen’s artistry extends to desserts as well—don’t miss the velvety Chocolate Mousse infused with masala chai or the decadently spiced Carrot Cake layered with cream cheese mousse and orange caramel, each bite evoking warmth and refined comfort.

The atmosphere here is lively and intimate, though reviewers have noted that the dining room’s close-set tables contribute to a bustling—and occasionally noisy—environment. This vibrant energy suits the restaurant’s spirit, where passionate bartenders craft expertly balanced cocktails, such as the barrel-aged Manhattan or the refreshing Peach Daiquiri, adding a festive, convivial edge especially during their popular happy hour featuring select beers.

True to its farm-to-fork philosophy, Blackbelly also operates a dry-aging cooler on-site, ensuring that their meats reach unparalleled depth of flavor and tenderness, a fact eagerly applauded by devoted patrons who have hailed it as “best food in town.” While the venue shines brightest for carnivores, it also thoughtfully caters to plant-based diners with fresh, expertly prepared vegetable dishes and vegan pasta options, reflecting a culinary inclusiveness that broadens its appeal.

Customer experiences capture the essence of Blackbelly’s charm: “Flawless presentation, impeccable service, and exquisite flavors,” enthused one visitor who appreciated the behind-the-scenes chef’s bar experience. Others praise the bread offerings—particularly the focaccia and seeded sourdough—which are described as some of the best bread and butter ever tasted, crispy, warm, and perfectly textured. Service consistently earns high marks for its friendliness and knowledge, while the kitchen’s craftsmanship transforms each plate into a feast for the senses.

In all, Blackbelly Market & Restaurant is more than just a place to eat—it is a destination where food is elevated through passion, precision, and respect for ingredients. Whether you are a local or a traveler seeking Boulder’s finest culinary expression, this spirited establishment promises a memorable, deeply satisfying dining experience that lingers long after the last bite.

Outstanding food, delicious dishes, good service. Tables are rather small and positioned way too close together, noise level was quite high. Wine prices are rather high: steak, lamb and pork dishes were outstanding. Focaccia was great, fresh and warm, just pieces of it were humongous, so we had to break them apart ourselves. Tip of 6% for kitchen was included on the bill.

My sister recommended Blackbelly and so glad she did. We stopped in at an odd time and were able to sit at the bar. Both bartenders were great. So friendly, passionate about their craft and the restaurant, and made great drinks. Onto the food. We started with the focaccia and seeded sourdough. OMG - some of the best bread and butter I have had. Ever. The focaccia had a perfect crispy crust with a light interior and the right amount of wonderful olive oil on it. Wow. Then the seeded sourdough. Great deep sourdough flavor with a perfect crust, and the seeds were a great flavor addition. I love bread and appreciate a great butter and this was it! We also had the ricotta and preserves. Kind of simple yet delicious and a great mix of flavors. Almost decadent. Sadly we didn’t save much room for the burger and raw veggies with dip but did our best. The veggie plate was beautiful and full of unique and tasty veggies. Light yet satisfying. The burger was good but they had me at confit garlic in the fries. What wonderful nuggets of goodness!! We definitely enjoyed our meal and will be back for more!

Flawless presentation, impeccable service, and exquisite flavors. Pretty much everything you want when you make a dinner reservation. Came into town from Austin with my daughter and sat at the chef’s bar which was a great experience for her to see the behind the scenes magic that goes into the details of executing a perfect plate. Cannot recommend dinner at Blackbelly more…a true gem.

Best food in town! They have their own dry age cooler. All the meats are great. The service is great. Ambience is great. Can’t say anything bad about this place. Must try!

Yes, yet another five star review for Blackbelly. However, I want to say- vegans, do not despair! There's something here for you too! The bread is phenomenal and you can get an olive oil dip rather than the regular, dairy-based one. The veggies are the freshest I've seen anywhere and carefully prepared. Plus, they can make a vegan version of the pasta dish, which is a delight. And while their cocktail menu is extensive, they also have a wide variety of non alcoholic drinks, including I Love Lamp, which is their take on the Arnold Palmer. Refreshing and not too sweet. Bon appetit!

Really just an all around wonderful dining experience. Myself and my team spent a week in Boulder. We all agreed this was our favorite restaurant and we visited some really good places . The overall ambiance is wonderful with a locker of meat showing . The bar in the back was very quaint . The star of the show was the food for sure. Excellent flavors. Everything cooked just perfectly. The service was on point and very well done. I had some very delicious scallops. I know it might be odd to order at a beef place, but they were excellent and I was in the mood for some. Very moist and delicious. Not cooked too long. Just an excellent dish. We had several appetizers, an amazing bread and a wonderful beef tartar. The menu even satisfied our vegetarian team member. I assure you you will enjoy this place for its food and everything else.

Exceptional food, cocktails, and service. My steak was tender and cooked just right. My waiter was very attentive and I never had to flag him down. He was always anticipating anything I was needing. It's a very popular place, but I had no issue being seated quickly. I've eaten at plenty of pricey places. Very few were what I would consider worth the extra cost. This place is one of maybe 5 places I can think of that are not only worth it, but not over charging considering the quality you get.
